Spruce Honeydew is a sweet substance produced by small insects (aphids, leafhoppers, scale insects), which feed on a large quantity of sap from the trees and secrete the honeydew , a substance rich in nutritional elements and mineral salts. Bees collect honeydew and transform it into honey thanks to the enzymes they produce. The honey then remains to ripen in the honeycombs of the hive. Dark in color, in aromas and on the palate it recalls fir resin and barley malt with a hint of smoke. It is of medium sweetness and does not crystallize
